Mongra is cut from the very top of the thread — all red, no yellow. The same pinch colours deeper and perfumes further, so the toffee needs less of everything else.

Ultra-pure, free from contaminants. The grade used for making medicines.

The yellow is saffron. The green is pistachio. That is the whole trick.

The man behind the taste

He has burnt more sugar than most people will ever cook. That is how you learn caramel — not from a book, but from the smell of the batch you lost.

Every batch is still made the same way: whole milk reduced slowly, sugar watched until it turns exactly the brown he wants, ingredients weighed by hand and checked by nose. Nothing here is automated, because nothing here needs to be faster.

He does not appear on the packaging. He would rather you remember the saffron.

A small cylinder of slow-cooked toffee, about six grams of it. Twelve to a pack, 70 g in total. The shape is practical: it fits a pocket, a drawer, and the ten minutes you actually have.

None. The yellow is Mongra saffron, the green is Pishori pistachio, the white is Mamra almond, and the brown is what sugar does when you cook it slowly and pay attention.

No. Toffee travels well. Keep the pack below 30°C and out of direct sun and the bullets arrive the way they left the kitchen.

Best before 2 months from the date of manufacture, printed on the pack — though no pack has ever been observed lasting that long. Once opened, fold the pack shut and finish it within a few weeks.

Yes — there is nothing in a bullet that is unfit for a child. But keep bullets away from children. You may not get any.
